Easy Southern Banana Pudding
Type: Bread
Ingredients: 3 cups cold milk
2 pkg. (4-serving size each) JELL-O Vanilla Flavor Instant Pudding & Pie Filling
30 NILLA Wafers
3 medium bananas, sliced
1 tub (8 oz.) COOL WHIP Whipped Topping, thawedDirections: POUR milk into large bowl. Add dry pudding mixes. Beat with wire wisk 2 minutes or until well blended. Let stand 5 minutes.
ARRANGE half of the wafers on bottom and up side of 2-qt serving bowl; top with layers of half *each* of the banana slices and pudding. Repeat all layers. Cover with whipped topping.
REFRIGERATE 3 hours or until ready to serve. Store leftover dessert in refrigerator.Notes:Makes 14 servigs, about 2/3 cup each.

Ingredients: 1 frying chicken, cut into frying pieces
1 1/2 cups flour
1 Pkt. (dry) Good Seasons Italian Dressing (THE 11 herbs and spices!)
1 Envelope Lipton (or other brand) Tomato Cup of Soup
2 eggs, well beaten
2/3 cup milkDirections: Vegetable oil to cover bottom of your skillet; about 1/2 inch deep.
1. Combine eggs and milk. Set aside.
2. Combine flour with the Italian dressing and soup mix.
3. Dip chicken pieces in milk-egg mixture and roll them in the
flour-seasoning mixture. Repeat procedure.
4. Fry pieces over medium heat for 25 to 30 minutes, turning often.

Ingredients: 1 lb small red potatoes
1 tablespoon olive or vegetable oil
1/2 teaspoon salt
1/8 teaspoon pepper
2 tablespoons grated Parmesan cheeseDirections: Cut the potatoes into 1/4 in thick slices; toss with oil. Place in a single layer in a greased 13in x 9in x 2in baking pan. Sprinkle with salt, pepper and Parmesan cheese. Cover tightly with foil. Bake at 350 degrees for 40 minutes or until tender.

Ingredients: 1 pound ground beef
1 small onion -- chopped
1 clove garlic -- chopped
1 tablespoon chili powder -- (up to 2)
1 tablespoon bisquick baking mix
3 tablespoons water
1 can tomatoes
1 can whole kernel corn -- drained
1 can chopped pitted ripe olives -- drained
1 1/2 teaspoons salt
3/4 cup bisquick baking mix
3/4 cup cornmeal
2/3 cup milk
1 eggDirections: Heat oven to 350 degrees. Cook and stir beef, onion and garlic until
brown, drain. Mix chili powder, 1 Tbsp. baking mix and 3 Tbsp. water; add
to beef. Stir in tomatoes, corn, olives and salt. Heat to boiling. Pour
into ungreased square baking dish, 8x8x2 inches, or 2 quart round
casserole. Mix 3/4 cup baking mix, the cornmeal, milk and egg; pour over

Ingredients: 1 tb Garlic, finely chopped
2 tb Brown bean paste
1/4 c Ginger, finely chopped

Amish Apple Dumplings Recipe
Type: Breakfast
Ingredients: 6 apples, peeled and cored
1 lemon juice
1/2 cup white sugar, approx
1 tsp cinnamon
1 brown sugar
1 butter
2 pie pastry for 2 pies
1 sugar sauce:
2 cup water
3/4 cup sugar
2 tsp vanilla
2 tbsp butter
1/4 tsp nutmeg
1/4 tsp maceDirections: Roll out pastry and cut into squares enough to cover apples completely. Peel and core apples. Roll in lemon juice. Then roll in white sugar and cinnamon combined. Place on pastry square. Stuff core cavity with brown sugar, butter, brown sugar in equal parts. (The amount depends on size of core cavity, just stuff full.) Fold pastry up around apple to completely enclose it. Place in pan. Prepare sugar sauce by mixing water, sugar, vanilla, butter, nutmeg, and mace and boiling for 1 minute. Let cool slightly. Pour over Apples. Bake in 375 F oven for 1 hour. Serve warm.

Apples may be frozen in pastry (before sugar sauce is added) if desired. Good dessert to make ahead if you have lots of apples around. Just let thaw when ready to use, and cover with sugar sauce and bake as usual.

Breakfast Casserole
Type: Dessert
Ingredients: 16 slices dried bread, cubed
1 lb Cheese (Cheddar recommended)
1 lb Sausage, Bacon, Ham (crumbled)
6 cups Milk
13 - 14 lightly beaten eggs
1 tsp Dry Mustard
1 tsp Salt
1/2 tsp Black PepperDirections: Butter the casserole dish. Mix eggs & spices with fork, pour in milk.
Split bread, meat and cheese in 2 parts.
Put 1/2 of the bread, then 1/2 of the cheese, then 1/2 of the meat, repeat.
Pour milk, egg, and spice mixture over the top.
*** It is important to mix it up the night before and let it soak into the bread overnight for the next morning's breakfast. ***
Bake @ 350 degrees for 1 hour.Notes:This is a favorite recipe of our family from my Mom. There is, in my humble opinion, no better egg casserole in the world than this one and it is soooo easy!
You can also add 2 small cans of mushrooms.
You can also use 1 can of Cream of Mushroom soup as part of the milk.Nutrition Info: :) You really don't want to know!

Fruit Cake …
Fruit Cake
Type: Dessert
Ingredients: 1 cup flour
1 tsp Baking Powder
1/8 tsp salt
4 eggs, beaten
1 cup white sugar
1/4 cup fruit juice, wine or brandy
1 cup (3 slices) Candied Pineapple (chopped)
3 cups pitted Dates (1 lb)
1 cup whole candied cherries (1/2 lb)
2 cups English walnut halves or Brazil nuts (1/2 lb)
2 cups pecans (1/2 lb)
1 1/2 cup hickory nutsDirections: Mix first 6 ingredients (flour, Baking Powder, salt, eggs, sugar, and fruit/wine/brandy).
Beat well. Add fruit and nuts to batter. Blend thoroughly. Pack into angel food cake pan (well-greased). Bake at 325 for 1 1/4 hour.
Cool slightly about 1/2 hour before unmolding.
Wrap in wine or juice soaked cheesecloth and keep in closed container.
Keeps well. It doesn't need to be cured; ready to eat as soon as completely cooled.Source: Mom's Recipes

Slow Cooker Mac & Cheese

Ingredients: 1 Reynolds® Slow Cooker Liner
2 1/2 cups milk
1 can (10 3/4 oz.) condensed cheddar cheese soup
2 eggs, beaten
2 tablespoons finely chopped onion (optional)
4 cups shredded sharp cheddar cheese
1 package (16 oz.) elbow macaroni, uncooked
2 tablespoons flour
1/4 teaspoon black pepper
PaprikaDirections: OPEN slow cooker liner and place it inside a 5- to 6 1/2 -quart slow cooker bowl. Fit liner snugly against the bottom and sides of bowl; pull top of liner over rim of bowl.
COMBINE milk, soup, eggs, onion, cheese and macaroni in a large bowl until well blended. Sprinkle flour and pepper into cheese mixture; stir to combine. Pour into slow cooker liner. Place lid on slow cooker.
COOK on LOW for 3 1/2 to 4 hours.
CAREFULLY remove lid to allow steam to escape. Sprinkle with paprika. Serve food directly from slow cooker. Do not lift or transport liner with food inside. Cool slow cooker completely; remove liner and toss.

Ingredients: TOPPINGS:
2 cups cubed cooked chicken
1/2 to 3/4 cup barbecue sauce
1/2 cup julienned green pepper
2 cups (8 ounces) shredded Monterey Jack cheese
CRUST:
1 package (1/4 ounce) active dry yeast
1 cup warm water (110 to 115 degrees)
2 tablespoons vegetable oil
2 teaspoons sugar
1 teaspoon baking soda
1 teaspoon salt
2 3/4 to 3 cups all-purpose flourDirections: In a mixing bowl, dissolve yeast in water. Add the oil, sugar, baking soda, salt and 2 cups flour. Stir in enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Cover and let rest for 10 minutes. On a floured surface, roll dough into a 13 inch circle. Transfer to a greased 12 inch pizza pan. Build up edges slightly. Grill, covered, over a medium heat for 5 minutes. Remove from grill. Combine chicken and barbecue sauce; spread over the crust. Sprinkle with the green pepper and cheese. Grill, covered, 5-10 minutes longer or until crust is golden and cheese is melted.

Ingredients: 2 3/4 cups cooked tomatoes
2 tablespoons lemon juice
4 cups sugar
1 box pectinDirections: Measure sugar and set aside.
Put the remaining items (lemon juice, tomatoes and pectin) in a 4 to 6 quart kettle.
Stir over high heat until mixture reaches a fast boil
Stir in sugar, bring to fast rolling boil.
Boil one minute.
Remove from heat and quickly skim off the foam.

Scrapple
Type: Dessert
Ingredients: 1 1/2 cup yellow corn meal
1 lb pork sausage, seasoned
1/2 tsp dry sage leaves, crumbled
1/2 tsp salt
1 tblsp chopped parsley
1 10 3/4 oz can chicken broth, undilutedDirections: In a small bowl, blend together corn meal and 1 cup water.
In large saucepan, combine pork sausage, sage, salt, parsley and chicken broth.
gradually stir in 2 cups of water, being careful to separate sausage into fine pieces.
Bring to boil.
Slowly add corn meal to the boiling mixture, stirring constantly with a wire whisk.
Reduce heat and simmer uncovered for 15 minutes.
Turn into a 9x5x3" loaf pan.
Bring to room temperature.
When cooled, refrigerate covered.Notes:To serve, slice into 1/4" slices and brown on a griddle -- serve with syrup, if desired.

Marshmallow Treats
Type: Dessert
Ingredients: 1/4 cup margarine
4 1/2 cups mini marshmallows
6 cups Rice Krispies, Popcorn or Puffed RiceDirections: Melt margarine in large pan (at least 3 quart)
Add marshmallows and cook stirring constantly until all marshmallows are melted and mixture is syrupy.
Remove from heat - add cereal, stir until well coated and spread while warm in a greased 13x9x2 pan.
Wet your hands and press down firmly.
Cut when cool.Notes:You can use 2 cups of marshmallow creme in place of regular but be sure to heat until syrupy.

Ingredients: 3 cups frozen shredded Hash Browns
3/4 cup shredded cheese
1 cop diced cooked ham or bacon
1/4 cup sliced green onion
4 beaten eggs
1 1/2 cup milk
1/4 teaspoon pepper
1/8 teaspoon saltDirections: Arrange in a greased 2 quart square baking dish, potatoes, then cheese, ham and green onion.
Combine eggs, milk, pepper and salt and pour over potato mixture. (May be covered and refrigerated overnight)
Bake <em>uncovered</em> in 350 degree oven for 40 to 45 minutes (55 to 60 minutes, if chilled) or until center appears set.Notes:Let stand for 5 minutes before serving.

Best Lemon Meringue Pie
Type: Dessert
Ingredients: 5 tablespoons Argo Corn Starch
3 egg yolks, beaten (save whites)
2 cups water
2 tablespoons butter
1 cup sugar
5 tablespoons lemon juice
1/4 teaspoon salt
2 teaspoons grated lemon rindDirections: Mix Argo with 1/2 cup cold water in the top of a double boiler.
Blend in the sugar and salt.
Add remainder of water and blend well, stirring constantly over low heat until it boils.
Cover and cook 10 minutes.
Gradually stir in the beaten egg yolks.
Cook 2 minutes more.
Add lemon juice, rind and butter.
Mix well.
Cool and pour into pie shell.
Meringue: Beat 3 egg whites stiff, gradually beat in 6 tablespoons of sugar.
Pile on top of pie.

Ingredients: 1 can Eagle Brand condensed milk
3 egg yolks
2/3 unsweetened pineapple juice
1 cup drained, crushed pinappleDirections: Blend milk and egg yolks.

Ingredients: 4 cups flour
1 teaspoon salt
3 teaspoons baking powder
3 tablespoons sugar
2 tablespoons shortening
1 1/4 cup milkDirections: Sift the flour, salt, baking powder and sugar twice.
Cut in shortening.
Add milk to make soft dough just firm enough to roll.
Cover bowl and let dough stand for 30 to 60 minutes.
Roll 1/4" thick on floured board.
Cut in diamonds (or whatever).
Heat 1" oil to about 370 to 380 degrees.

Ingredients: 3/4 cup graham cracker crumbs
1/4 cup finely chopped walnuts
1/4 cup sugar
3 tablespoons margarine or butter, melted
2 (8 ounce) packages cream cheese, softened
1 can ready to serve frosting
1/2 teaspoon rum extract
21 ounce can cherry fruit pie filling, chilledDirections: In small bowl, combine crumbs, nuts, sugar and margarine/butter.
Press in bottom of 9" square pan.
In a large bowl, beat cream cheese until fluffy.
Add frosting and extract.
Mix well.
Spread over crumbs in pan.
Freeze for 2 hours.
Spoon pie filling over top.

Ingredients: 1 cup enriched flour
1 teaspoon salt
2 eggs
1 teaspoon baking powder
1/4 cup milk
1 tablespoon melted shortening
1 1/2 cup canned whole kernel corn
Directions: Combine flour, salt, baking powder, beaten eggs, shortening and corn.
Drop from teaspoon into deep fryer that has been heated to 365 degrees (or when a 1 inch cube of bread browns in 60 seconds)
Fry until golden brown and cooked in center, turning after 2 or 3 minutes.

1/2 pint whipping cream
2 teaspoons powdered sugar
1/2 cup bananas
1/2 cup pineapple
1 cup quartered marshmallows
1/2 cup nutmeatsDirections: Prepare gelatin and chill until shivery.
Whip cream and add sugar.
Beat gelatin until foamy.
Fold in cream, then nuts, fruit and marshmallows.Notes:Store in refrigerator for several hours before serving.

Dandelion Jelly
Type: Dessert
Ingredients: 1 quart dandelion blossoms
1 quart water
1 package (1 3/4 ounce) pectin
2 tablespoons lemon juice
4 1/2 cups sugar
yellow food color (optional)Directions: In the early morning, pick 1 quart of blossoms without any of the stem.
Boil in 1 quart of water for 3 minutes.
Drain off 3 cups of liquid.
Add the pectin and lemon juice to the 3 cups of liquid and return to a boil.
When it begins to boil, add sugar and a few drops of color.

Ingredients: 1/2 cup margarine
2 cups brown sugar
2 cups flour
1/4 teaspoon salt
2 teaspoons baking powder
2 eggs

1 cup coconutDirections: Melt butter in 3 quart pan.
Add brown sugar; heat until bubbly.
Cool.
Add eggs, coconut, vanilla and dry ingredients.
Spread in 1x10x10 greased pan.

Ingredients: Cake:
1 package yellow cake mix
1 cup finely chopped peeled apples
1/2 cup dairy sour cream
3/4 cup applesauce
1/4 teaspoon cinnamon
3 eggs
Frosting:
1 can Ready To Serve vanilla frosting
1 teaspoon cinnamonDirections: Heat oven to 350 degrees.
Grease and flour 2 - 8 or 9 inch round pans.
In a large bowl, combine all cake ingredients at low speed until moistened.
Beat for 2 minutes at mixers highest speed.
Spoon batter evenly into prepared pans.
Bake for 30 to 40 minutes.
Cool for 15 minutes - remove and cool completely.
In a small bowl, stir frosting and cinnamon until well blended.

Smooth 'N Creamy Frosting
Type: Dessert
Ingredients: 1 package (4 serving size) any flavor instant pudding
1/4 cup powdered sugar
1 cup <span style="text-decoration: underline; ">cold</span> milk
3 1/2 cups (or 1 - 8 ounce container) Cool Whip, thawedDirections: Combine pudding mix, sugar and milk in small bowl.
Beat slowly with rotary beater or at lowest speed on mixer until well blended, about 1 minute.
Fold in the Cool Whip.
Spread on cake at once.Notes:Makes about 4 cups or enough for 2 9 inch layers.

Spaghetti "Pie" Casserole
Type: Dessert
Ingredients: about 8 ounces spaghetti, cooked
3 tablespoons butter
1/2 cup grated Parmesan Cheese
3 well-beaten eggs
1 1/2 cups cottage cheese
1 1/2 pounds ground beef
3/4 cup chopped onion
1/3 cup green peppers, chopped
15 1/2 ounces whole tomatoes
6 ounces tomato paste
8 ounces Mozzarella Cheese
Salt and pepper
oregano
garlic powderDirections: Stir butter, cheese and eggs into cooked, drained spaghetti.
Form "crust" in oblong buttered dish.
Spread 1 1/2 cups cottage cheese over bottom of "crust".
Cook ground beef - onion - green peppers until tender and brown.
Drain off fat.
Stir in chopped tomatoes, tomato paste, oregano, garlic, salt - turn into "crust" on top of cottage cheese.
Bake at 350 degrees for 20 minutes.

Ingredients: 1 pound ground beef
1/2 cup chopped onion
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder (or oregano)
8 ounce can tomato sauce
Mushrooms (optional)
2 1/2 cups macaroni (cooked and drained)
Any amount of cheese
3 eggs
3/4 cups milkDirections: Brown meat, onions and seasonings.
Drain off excess grease.
Add tomato sauce and mushrooms.
Put in a 9x13 inch pan.
Pour the macaroni over the meat mixture then add cheese.
Mix eggs and milk and pour it on top of the cheese.

Ingredients: 2 - 8 ounce packages Cream Cheese, softened
1/2 cup sugar
1/2 teaspoon vanilla
2 eggs
1 ready to use Graham Cracker Crust (6 ounce or 9 inch)Directions: 1. Mix cream cheese, sugar and vanilla with electric mixer on medium speed until well blended. Add eggs; mix until blended.
2. Pour into crust.
3. Bake at 350 degrees for 40 minutes (until center is almost set)
Cool in refrigerator for 3 hours (or overnight)Notes:Yield: 8 servings

Caramel Apples …
Caramel Apples
Type: Casserole
Ingredients: 1 pound (56) vanilla caramels
2 tablespoons water
Dash salt
6 wooden skewers
6 crisp, medium apples
Chopped California walnutsDirections: Melt caramels with water in double boiler, stirring frequently until smooth. Add salt. Stick a skewer into blossom end of each apple. Dip apple in the caramel syrup. (If syrup is too stiff, add few drops water.)
At once roll bottom half of coated apple in chopped nuts. Set on cookie sheet
covered with waxed paper. Chill till firm.

2/3 cup water
1 tsp. ground nutmeg
3 1/3 cups flour
2/3 cup chopped nuts (optional)
some melted shorteningDirections: You will need 8 wide mouth pint jars and seals.
1. Preheat oven to 325 degrees
2. Grease the inside of jars with melted shortening (make sure not to get it on the rim of jars)
3. Cream shortening and sugar.
4. Beat in eggs, pumpkin and water.
5. Sift together the dry ingredients.
6. Beat dry into pumpkin mixture.
7. Mix in nuts.
8. Fill jars 1/2 full with batter
9. Bake open jars for 60 minutes.
10. When done take one jar out at a time and clean rim of jar with moist cloth and place on seal and tighten down firmly. Set aside and repeat with next jar. Jars are sealed when you hear a pop noise or when you press seal and it does not make a clicking noise.Notes:These jars will last up to 3-4 months on your shelf in a dry and dark area. To eat just open jar and it should just come right out.

Brownie Sandwiches …
Brownie Sandwiches
Type: Breakfast
Ingredients: 1 Brownie mix,
1 tbsp water,
1 lg egg,
1/3 cup of oil,
cream cheese frosting (as desired)Directions: Take one brownie mix, add 1 tablespoon of water, l large egg, 1/3 cup of oil and mix well. Form cookies with a teaspoon of dough at a time. Bake at 350 for 15 minutes (maybe more) until set. Let cookies cool. Put cream cheese frosting in between. Enjoy!

Grandma's Sugar Cookies …
Grandma's Sugar Cookies
Type: Dessert
Ingredients: 1 c. shortening
2 c. sugar
2 tsp. vanilla
2 eggs
6 c. sifted flour
1/2 tsp. salt
3 tsp. baking powder
1 c. milkDirections: Cream shortening, sugar and vanilla until light a fluffy. Beat in eggs. Sift flour with salt and baking powder and add alternately with milk to make a smooth dough. Chill about 2 hours in refrigerator. It will be easier to roll out. Roll 1/8 inch thick on lightly floured board and cut. Sprinkle with sugar. Bake on a greased cookie sheet in a moderate 375 degree oven for 20 minutes or untill lightly brown. Makes about 4 dozen large cookies.
Notes:Mom noted that you could roll them out 1/8" to 1/4" before cutting. Also you can add 1/4 tsp. nutmeg for added flavor if you wish.
